Baking Extravaganza

Okay, extravaganza might be overselling it a little bit, but I did bake a couple of things tonight on a whim.  My bestie Erin's fiance, Ben, loves key lime pie.  Enough so that it will be a dessert option at their wedding.  It got me thinking about the last time I tried to make key lime pie.  It was in high school and my mom and I were making it for the first time.  I don't remember what kind of recipe I had or where it came from, but something went horribly wrong.  The filling turned into a giant ball of greenish butter sitting in a bowl of green liquid.  Not exactly what you want in a pie.  Needless to say, it went in the trash and that was the end of key lime pie making.  Until tonight!  I found a new recipe that looked do-able and had great reviews.   It also had no green food coloring (which maybe should have been a tip-off for a less than awesome recipe the first time)...


Because my plan was to give this pie to Ben, I haven't tasted it yet.  I'm still debating if it's way too tacky to give him a pie with a slice missing...

And then I had three egg whites sitting in a bowl.  I hate to throw leftover egg whites or yolks away if I don't have to.  So I turned to my favorite handy-dandy search engine, Google.  And I came across this recipe for pecan meringue cookies which needed three egg whites.  It is a very similar recipe to forgotten cookies we make for Passover.  So I went with what I knew and substituted in walnuts for the pecans and added chocolate chips. 


The definite bummer is that these have to sit in the oven for hours before they are ready.  So I won't get to eat this tonight either.  Apparently I should have thought a little more about what I was going to get to snack on before I started baking tonight!
